james martin vanilla fudge


300ml full fat milk
350g caster sugar
100g unsalted butter
1tsp vanilla extract 
  • line 18cm square tin
  • put milk, sugar, butter in saucepan
  • heat, stirring all the time, until sugar is dissolved and butter melted
  • bring to boil for 15-20mins and 115c
  • remove from heat and stir in vanilla
  • cool for 5mins
  • beat with a spoon until starts to thicken and loose gloss
  • pour into tin and leave to cool in room not fridge 
  • cut into squares
